Chili
Ingredients:
½ - 1 Pound of Ground Beef
2 Pounds beef (roast or steak)
1 Can of black beans
1 Can of red kidney beans
3 Cans of diced tomatoes with chilis
2 Cans of green chilis
1 Onion
Salt and pepper
Onion powder
Garlic powder
Crushed red pepper
Cumin
Chili powder
Optional for Extra heat:
1 Habanero
1 Jalapeno
1 Package of chorizo
Directions:
Place the steak whole in a crockpot. Add the ground beef or chorizo and spices. Dice the onion thickly and add it to the pot. Drain the beans of all the liquid before adding. Add the tomatoes with their liquid. Add chilies and stir everything together. Let it cook in the crockpot on high for 6 hours at least. You can stir periodically throughout the day if you like. After 6 hours stir and taste. Go ahead and add more spices to taste. Serve with any kind of toppings you like or even use it as a topping.
Tips and Tricks:
Use cans of tomatoes that have spices or chilies. I like using fire roasted tomatoes and tomatoes with hatch chilies. It adds more flavor to the chili. If the soup is too thin, add some flour to thicken it up. I like to serve it with jalapeño cheddar corn bread.
