Chicken Spinach Soup
Ingredients:
2 Chicken Breasts
½ Onion
Spinach
Water
Spices: salt, pepper, onion powder, garlic powder, celery seed, chicken bullion
Directions:
Cut onion into thick slices. In a large pot sauté onion in a little butter until fragrant. Chop chicken into chunks and add to the pot with the spices. Once chicken is browned fill the pot with water. Cook on medium low heat for 20 minutes then add the spinach and finish cooking for 10 more minutes.
Tips:
Serve over tortellini or rice if you are extra hungry. At the beginning of every winter season, I like to boil chicken feet in a giant stock pot to make my own chicken stock for the season. Then I freeze them in smaller tubber ware.
