Adobo

Ingredients:

  • 1 Chicken Breast

  • 3 Chicken thighs

  • 1 Onion

  • ¾ Cup Soy Sauce

  • ¼ Cup Vinegar

  • Water

  • Spices: pepper, onion powder, garlic powder, crushed red peppers

Raw chicken thighs, a piece of pork, halved green bell pepper, cherry tomatoes on a vine, a whole red chili pepper, a black bowl of black peppercorns, garlic cloves, on a wooden cutting board on a gray countertop.

Directions:

Place chicken in crockpot whole. Cut onion into thick slices and add it to the pot. Add spices, soy sauce, and vinegar to the pot. Fill the pot with water until it just covers the chicken completely. Cook on high for 8 hours. If you have an Instapot, cook on slow cook for the same amount of time. Serve over rice.

Tips:

Using bone in chicken thighs adds more flavor to the soup. If you like spice I add a few Thai peppers.
